Ingredients
- 1½ ozLustau Papirusa
Manzanilla Sherry
- ¾ ozBombay Sapphire
Gin
- ¾ ozGordon's London Dry Gin

- 1 dashOrange bitters
- Jacobsen Sea Salt Solution
Saline Solution
Method
Add the ingredients, except the sea salt solution, to a mixing glass with ice. Stir to chill and strain into a chilled glass. Express and discard a lemon twist over the top and spray the sea salt solution. Garnish.
Notes
A savory take on a low-proof classic. Manzanilla sherry replaces dry vermouth for a seriously dry, saline finish. Sea salt solution: combine 4 parts hot water with 1 part Jacobsen sea salt, stir until dissolved, decant into a spritzer or atomizer.
