  • Plymouth Gin
    Gin
    oz
  • Lemon Juice
    ½oz
  • Dolin Dry Vermouth
    Dry vermouth
    ½oz
  • Simple syrup
    ½oz
  • Egg white
    Egg
    ¼oz

Method

Combine ingredients in a shaker and dry-shake without ice for 10 seconds. Add ice and shake vigorously for at least 10 seconds. Strain into a chilled glass.

Notes

Raspberry syrup: 1 part raspberries, 1 part water, 2 parts sugar. Muddle with sugar, rest 20–30 min, add water, stir, strain through a chinois. Do not boil.
